Another great evening at PARC Aspen with their impeccable staff. We loved our Organic Salmon and Bourbon Smoked Elk Loin entrees. The ending with the unique Cherry Soufflé with chocolate mousse and pistachios, was outstanding.

Every single dish was a delight. The elk carpaccio was so unique and delicious, with a subtle lemon hint that made it incredibly fresh and balanced…The mushroom & polenta, which was another 10/10. Rich, comforting, and beautifully prepared. The wagyu was unforgettable — the kind of dish you keep thinking about long after the meal. I’ll be dreaming about it until our next visit for sure.
