Our Story

Established in 2022, PARC Aspen is an Aspen Seasonal restaurant nestled in the heart of Aspen, Colorado on historic Hyman Avenue. The restaurant offers three levels of dining with a focus on local, sustainable cuisine. Owners Maryanne and Harley Sefton set out to create the idea of PARC Aspen when they recognized a need for more locally owned and operated eateries. Their dream was to establish a restaurant where locals and visitors alike could come together in an open, park-like space to share a delicious meal. 

Under the direction of Ryan Doremus at Thunderbowl Architects and Andrew Burlingame of Burlingame Construction, the space formerly occupied by L’Hostaria has been transformed into a modern French farmhouse with clean lines and fresh perspective. The modern locals bar accommodates 30 between the bar and banquettes, the contemporary finer dining room offers seating for 78 and the 620 room showcases a table for 12. Weather permitting, the patio will accommodate 30.

With an extensive wine list curated by Wine & Beverage director Greg Van Wagner [formerly of Jimmy’s] and a creatively innovative menu by Executive Chef Mark Connell, PARC Aspen is the home away from home for locals and locals at heart.
